I made this salad based on my ‘Tuna Mayo & Mixed Beans Salad’ replacing Mixed Beans with Boiled Soy Beans and Corn Kernels. The mixture of Tuna and Mayonnaise goes well with anything, but I like to mix it with crunchy Vegetables. Crunchy Boiled Soy Beans are perfect.

2 to 3 Servings
Ingredients
1/2 Continental Cucumber *about 100g, cut into small pieces
1/8 Red Onion *finely chopped
1 cup Boiled Soy Beans
1/2 cup Corn Kernels *thawed if frozen
Salt & Black Pepper
1 can (95g) Tuna *I used Tuna in Springwater, drained
2-3 tablespoons Japanese Mayonnaise
1/2 teaspoon Soy Sauce *alter the amount to suit your taste
Method
- Place Cucumber, Red Onion, Boiled Soy Beans and Corn Kernels in a mixing bowl. Season with Salt and Black Pepper. Freshly ground Black Pepper is the best.
- Add Tuna, Japanese Mayonnaise and Soy Sauce, and mix to combine. Taste it, you might need to add extra Salt & Black Pepper, OR extra Soy Sauce.
