I made this salad based on my ‘Tuna Mayo & Mixed Beans Salad’ replacing Mixed Beans with Boiled Soy Beans and Corn Kernels. The mixture of Tuna and Mayonnaise goes well with anything, but I like to mix it with crunchy Vegetables. Crunchy Boiled Soy Beans are perfect.

2 to 3 Servings

Ingredients

1/2 Continental Cucumber *about 100g, cut into small pieces
1/8 Red Onion *finely chopped
1 cup Boiled Soy Beans

1/2 cup Corn Kernels *thawed if frozen
Salt & Black Pepper
1 can (95g) Tuna *I used Tuna in Springwater, drained
2-3 tablespoons Japanese Mayonnaise
1/2 teaspoon Soy Sauce *alter the amount to suit your taste

Method
  1. Place Cucumber, Red Onion, Boiled Soy Beans and Corn Kernels in a mixing bowl. Season with Salt and Black Pepper. Freshly ground Black Pepper is the best.
  2. Add Tuna, Japanese Mayonnaise and Soy Sauce, and mix to combine. Taste it, you might need to add extra Salt & Black Pepper, OR extra Soy Sauce.
