I love rice. Especially I love Brown Rice mixed with other grains including Wild Rice, Barley and Quinoa. It takes a long time to cook. So I recommend you to cook more than you need and freeze the leftovers. This dish is one of our heavily repeated dinner menus. My daughter made it first and we all loved it.

Ingredients

Cooked Mixed Grains 1 to 2 cups
Garlic 1 clove *finely chopped
Olive Oil 2 to 3 tablespoon
Mushrooms about 500g *sliced
Green Vegetables (Spinach, Kale, Silver Beet Leaves, etc.) 1 bunch or as required
Salt & Pepper

Method
  1. Heat Olive Oil in a large frying pan over medium heat.
  2. Add the Garlic and Mushrooms, cook stirring occasionally for 10 minutes or until the mushrooms are tender and browned.
  3. Add washed Green Vegetables and toss until the vegetables wilt. Add the cooked Grains.
  4. Season to taste with Salt and Pepper and combine well.
