Ramen has become very popular in Melbourne where I live. It seems ‘Tonkotsu’ Ramen is the most popular one. To make the ‘Tonkotsu’ Ramen Soup, you need to boil the Pork Bones for a long time. This Mock ‘Tonkotsu’ Ramen Soup is quick & easy and tastes good. If you use plant-based Stock and Milk, it can be vegan.

Ingredients

1 serving Ramen Noodles
Toppings of your choice *Today I added Roast Pork, Boiled Egg, Seasoned Black Fungus and Spring Onion
Toasted Sesame Seeds *optional

Soup
1 cup Chicken Stock *OR 1 cup Water and 1 teaspoon Asian Chicken Bouillon Powder
1/4 teaspoon Dashi Powder *I used Kombu (Kelp) Dashi Powder
1 teaspoon Sesame Oil
1/2 teaspoon grated Garlic
1/2 teaspoon grated Ginger
1 tablespoon Soy Sauce
1 teaspoon White Miso *optional
White Pepper
1/4 cup Milk
1/4 teaspoon Salt *alter the amount depending on the saltiness of the stock

Method
  1. Place all the Sauce ingredients in a saucepan, bring to the boil, and stir well. Alter the amount of Salt.
  2. Meanwhile, cook Ramen Noodles according to the instruction on the package.
  3. Place the soup in a bowl, add drained Ramen Noodles, and place your favourite toppings. Sprinkle with some Toasted Sesame Seeds and enjoy.
