
I have two my own Caesar Dressing recipes. One is ‘My Legendary Caesar Dressing’ which is Olive Oil based. This one is Japanese mayonnaise based, and rich and creamy. Depending on the ingredients of the salad, this creamy dressing might suit better.

Ingredients
2 to 3 Anchovy Filets *finely chopped
1 small clove Garlic *grated
1/2 tablespoon finely chopped Parsley *finely chopped
1/2 teaspoon Whole Grain Mustard OR Dijon Mustard
1/2 teaspoon Worcestershire Sauce (‘Lea & Perrins’)
1 to 2 teaspoons Lemon Juice OR White Wine Vinegar *alter the amount
1 pinch Salt
Freshly Ground Black Pepper as required
1/4 cup (4 tablespoons) Japanese Mayonnaise
Method
Combine all ingredients well.
