Caesar Salad is one of the most popular salads. I have four recipes for Caesar Dressing. One is ‘My Legendary Caesar Dressing’ that is made with Olive Oil and Egg Yolk. The others are ‘My Creamy Caesar Dressing’ made with Mayonnaise, ‘Creamy Caesar Dressing with Soy Sauce’, and this one. It is identical to ‘My Creamy Caesar Dressing’ but made with Greek Yoghurt. They are all delicious.

Ingredients

1/4 cup (4 tablespoons) Unsweetened Greek Yoghurt
2 to 3 Anchovy Filets *finely chopped
1 small clove Garlic *grated
1/2 teaspoon Dijon Mustard OR Whole Grain Mustard
1/2 teaspoon Worcestershire Sauce (‘Lea & Perrins’)
1 teaspoon Lemon Juice OR White Wine Vinegar
1 pinch Salt *alter the amount
Freshly Ground Black Pepper as required
2 to 3 tablespoons finely grated Parmesan *optional, you can mix it with the Salad instead of adding it to the Dressing
1 pinch Sugar *optional

Method
  1. Combine all ingredients well. *Note: Alter the amount of Lemon Juice OR Vinegar depending on the acidity of Yoghurt. If the Dressing is too sour, add 1 pinch Sugar.
  2. *Note: The above Salad is made with Cos Lettuce, crispy fried Bacon and toasted cubed Bread. I added extra grated Parmesan.
