Dried Shrimp makes anything more delicious, adding its saltiness, ‘umami’ and lovely flavour to the dish. This is a very simple Cucumber Salad, but a tablespoon of Dried Shrimps take it to next level.

Ingredients

1 tablespoon Dried Shrimps *OR add more
Hot Water
1 Continental Cucumber *about 300g
1/4 teaspoon Salt
1 small clove Garlic *grated
1 teaspoon Toban Djan (Chilli Bean Sauce)
1 teaspoon Sesame Oil
1 teaspoon Toasted Sesame Seeds

Method
  1. Place Dried Shrimps in a small bowl, add hot water just enough to cover, and soak until soft. *Note: If Dried Shrimps are larger, you can bash them slightly. The softness depends on your preference.
  2. Cut Cucumber into bite-size pieces. Place in a mixing bowl, add Salt, and mix to combine. Then add all other ingredients including the water that was soaking Dried Shrimps, and mix to combine. Serve immediately.
