Along with the Japanese rice vinegar, Balsamic vinegar is an essential vinegar for my cooking. On the other day, I bought a bottle of ‘Aged Balsamic Vinegar of Modena’, and it was so sweet and rich. I was glad that I had spent extra dollars for it.

This sauce is great for everything, chicken, pork, beef, fish, prawns, squid, bread, etc. And it can be used as a salad dressing, too. This time I used it for this salad with grilled chicken. A handful of boring salad leaves and 1 chicken fillet turned into a delicious dish with this sauce.


Ingredients

Red Onion 1/6 to 1/4 *very finely chopped
Garlic 1 small clove *very finely chopped
Aged Balsamic Vinegar 2 tablespoons
Extra Virgin Olive Oil 2 tablespoons
Parsley 1 tablespoon *finely chopped
Basil 1 tablespoon *finely chopped, OR 1 teaspoon Italian Herb Mix
Whole Grain Mustard 2 teaspoons
Salt 1/2 teaspoon
Freshly Ground Black Pepper 1/4 teaspoon

Method
  1. Onion and Garlic need to be very finely chopped. I recommend not to grate them.
  2. Combine all ingredients and allow to rest for at least 1 hour.
