My ‘Pan-fried Broccoli & Cheese’ has become one of my family’s favourite Broccoli dishes. It is super quick & easy. Steam-frying in a frying pan is truely the best method to cook Broccoli. Today I added Anchovy. Of course I added Garlic as well. It couldn’t go wrong, could it? It was absolutely delicious.

Ingredients

1 large head Broccoli *cut into small florets, thick stem cut into small pieces
1 tablespoon Olive Oil
1 clove Garlic *finely chopped
1 pinch Salt
Chilli Flakes OR Ground Pepper as required
2 to 3 tablespoons Water
4-5 Anchovy Fillets *finely chopped
3/4 to 1 cup (80 to 100g) coarsely grated Cheese *I used shredded Cheese Mix (Cheddar, Mozzarella and Parmesan)

Method
  1. Drizzle Olive Oil over a non-stick frying pan and arrange Broccoli pieces. Add Water, sprinkle with Salt, Garlic and Chilli (OR Pepper). Cover with a lid and cook over medium heat for a few minutes.
  2. When the Water in the pan is evaporated, remove the lid, scatter Anchovy pieces and grated Cheese evenly, cover with the lid again, and cook until the Cheese is melted.
  3. Remove the lid and cook until nicely browned.
  4. Transfer to a serving plate, add extra Chilli OR Pepper if you like, and serve.
