My ‘Pan-fried Broccoli & Cheese’ has become one of my family’s favourite Broccoli dishes. It is super quick & easy. Steam-frying in a frying pan is truely the best method to cook Broccoli. Today I added Anchovy. Of course I added Garlic as well. It couldn’t go wrong, could it? It was absolutely delicious.

Ingredients
1 large head Broccoli *cut into small florets, thick stem cut into small pieces
1 tablespoon Olive Oil
1 clove Garlic *finely chopped
1 pinch Salt
Chilli Flakes OR Ground Pepper as required
2 to 3 tablespoons Water
4-5 Anchovy Fillets *finely chopped
3/4 to 1 cup (80 to 100g) coarsely grated Cheese *I used shredded Cheese Mix (Cheddar, Mozzarella and Parmesan)
Method
- Drizzle Olive Oil over a non-stick frying pan and arrange Broccoli pieces. Add Water, sprinkle with Salt, Garlic and Chilli (OR Pepper). Cover with a lid and cook over medium heat for a few minutes.
- When the Water in the pan is evaporated, remove the lid, scatter Anchovy pieces and grated Cheese evenly, cover with the lid again, and cook until the Cheese is melted.
- Remove the lid and cook until nicely browned.
- Transfer to a serving plate, add extra Chilli OR Pepper if you like, and serve.
