Today I had to cook some leftover Sardines Fillets. I was going to cook ‘Garlic & Panko Baked Sardines’, but it was just too hot to turn on the oven. I decided to cook them in a frying pan. I made the topping ingredients into stuffing, sandwiched it with the Sardine Fillets, and cooked with Olive Oil. This is another absolutely easy, quick and delicious recipe.

2 to 4 Servings

Ingredients

200g Sardine Fillets *I used 16 small fillets with no tail
Salt & Pepper
1-2 tablespoons Olive Oil
Finely Chopped Parsley

Stuffing
1 clove Garlic *grated
4 tablespoons ‘Panko’ Breadcrumbs
4 tablespoons grated Parmesan Cheese *about 12g
1 tablespoon finely chopped Parsley
1 Egg Yolk
Salt & Pepper

Method
  1. Combine all the Stuffing ingredients in a small bowl. Season very lightly with Salt & Pepper. You may wish to add no Salt at all as Parmesan is salty.
  2. Season Sardine Fillets with Salt & Pepper very lightly. Sandwich the stuffing with two fillets.
  3. Heat Olive Oil in a frying pan over medium heat, cook the stuffed Sardines until both sides are nicely browned and cooked though. Scatter with finely chopped Parsley and serve.
