If you love Barley and you are looking for a new way to enjoy it, try ‘Fried Barley’. Cooked Barley can be fried just like ‘Fried Rice’. This recipe is just one example of ‘Fried Barley’. Why don’t you try your favourite Fried Rice recipe replacing Rice with Barley.

Ingredients

1 tablespoon Oil *and extra as required
2 Eggs *lightly whisked
150 to 200g thinly sliced Pork *cut into small pieces
1 clove Garlic *finely chopped
1 teaspoon grated Ginger
1 Tomato *diced
3 to 4 Spring Onions *chopped
2 servings Cooked Barley *see ‘Method’ section to find out how to cook Pearl Barley
1 tablespoon Curry Powder *I used Asian Curry Powder
1/4 teaspoon Salt
1 tablespoon Soy Sauce

Method
  1. Rinse 1 cup (180ml cup) Pearl Barley and place in the rice cooker’s inner pot, add Water up to the 2-cups-marking, and 1 pinch Salt. Press ‘COOK’ button to start cooking. OR cook Pearl Barley in a saucepan. Just simmer in plenty of Water with 1 pinch Salt until soft, then drain.
  2. Heat Oil in a frying pan or wok over medium high heat, cook Egg and transfer to a plate.
  3. Add extra Oil if required, cook Garlic, Ginger and Pork until Pork is cooked. Add chopped Spring Onion and Tomato, and mix well. Season with Curry Powder, Salt and Soy Sauce.
  4. Add the cooked Barley and Egg, and mix to combine. Serve with refreshing salad.
