On the other day, I overcooked Potato and I couldn’t make what I meant to cook with it. So I just chucked it into a baking dish, added Canned Salmon, squeeze some Japanese Mayonnaise over, cover with some leftover Cheese, then baked it. The result was not bad at all. I am now writing down how I cooked it.

Ingredients

3 to 4 Potatoes *about 600g, peeled and cut into bite-size pieces
1 can (210g) Salmon
Salt & Pepper
Butter to grease a baking dish
Japanese Mayonnaise
1/2 cup shredded Tasty Cheese (Cheddar)
1 tablespoon chopped Parsley *OR Chives, Spring Onion, Dill, etc.

Method
  1. Cook Potato pieces in salted water until soft. Preheat the oven to 220℃.
  2. Drain Canned Salmon, remove unwanted large bones and skin from Salmon, and break into small pieces.
  3. Lightly butter a baking dish, place drained Potato pieces, sprinkle with Salt & Pepper. Spread Salmon evenly, squeeze some Japanese Mayonnaise over, and cover with shredded Cheese.

  4. Bake for 10 minutes or until the top is browned. Sprinkle with some green herbs and serve.
