
On the other day, I overcooked Potato and I couldn’t make what I meant to cook with it. So I just chucked it into a baking dish, added Canned Salmon, squeeze some Japanese Mayonnaise over, cover with some leftover Cheese, then baked it. The result was not bad at all. I am now writing down how I cooked it.

Ingredients
3 to 4 Potatoes *about 600g, peeled and cut into bite-size pieces
1 can (210g) Salmon
Salt & Pepper
Butter to grease a baking dish
Japanese Mayonnaise
1/2 cup shredded Tasty Cheese (Cheddar)
1 tablespoon chopped Parsley *OR Chives, Spring Onion, Dill, etc.
Method
- Cook Potato pieces in salted water until soft. Preheat the oven to 220℃.
- Drain Canned Salmon, remove unwanted large bones and skin from Salmon, and break into small pieces.
- Lightly butter a baking dish, place drained Potato pieces, sprinkle with Salt & Pepper. Spread Salmon evenly, squeeze some Japanese Mayonnaise over, and cover with shredded Cheese.
- Bake for 10 minutes or until the top is browned. Sprinkle with some green herbs and serve.
