
This is my favourite Prawn & Avocado Salad. The sauce is simple to make. Mix Japanese Mayonnaise with a little bit of Soy Sauce and Wasabi. I love the flavour of this sauce, however, my family members hate Wasabi. They prefer ‘Seafood Cocktail Sauce’. So, this salad is just for me.

Ingredients
200g shelled small Prawns
Salt
1 Avocado *cut into small pieces
1 thin Spring Onion *finely chopped
Sauce
2 tablespoons Japanese Mayonnaise
1/2 to 1 teaspoon Soy Sauce
1/2 to 1 teaspoon Wasabi
Method
- Prawns should be cooked in salted water and cooled. Remove shell and clean them. You would need about 50g shelled small Prawns per serve.
- Combine the Sauce ingredients in a bowl, add Prawns and Avocado, and gently mix to combine. Sprinkle with finely chopped Spring Onion on top and serve.
