You might have seen a product of thinly sliced Kombu (Kelp) that is seasoned and looks like coated with Salt. Sometimes it is called ‘Shio Kombu’ (塩昆布), Salted Kombu, however it is seasoned with Soy Sauce and Mirin as well. This product is extremely popular in the region where I grew up, and the best way to enjoy it is with freshly cooked Rice. Simply mix it with Rice. Today I added Edamame, Sesame Seeds and Spring Onion. This is a seriously yummy rice dish and it is super easy to make.

Ingredients

1 servings freshly Cooked Rice *about 200g
1 lightly packed tablespoonful Seasoned Kombu (Kelp)

1/4 cup Edamame Beans
1 pinch Salt
1 teaspoon Toasted Sesame Seeds
Finely chopped Spring Onion

Method
  1. Thaw Edamame Beans if frozen, add 1 pinch Salt, mix to combine, and set aside.
  2. Place hot Rice in a bowl, add Seasoned Kombu, lightly salted Edamame Beans, Toasted Sesame Seeds and Spring Onion. *Note: I saved some Sesame Seeds and Spring Onion for topping.
  3. Mix well, so that the flavour and Umami comes out from Kombu and Rice will be seasoned. I added the saved Sesame Seeds and Spring Onion on top.
