Salmon is probably the most popular fish in Melbourne. A local fish shop has started selling sashimi-grade fresh Salmon and I am very happy. You don’t like Sashimi? The texture of raw salmon is not very different from the smoked salmon’s texture. Try this spicy and delicious Salmon rice bowl. You will love the raw Salmon. *Note: Salmon sashimi can be replaced with other fish sashimi.

Ingredients

200g Sashimi-grade Fresh Salmon *bones removed, sliced
1/4 Red Onion *finely sliced
1 to 2 handfuls Vegetables *Today I used ‘Shungiku’
*e.g. Salad Leafy Vegetables, Mizuna, Endive, Spinach, Carrot, etc.
2 servings Freshly Cooked Rice
1/2 sheet Nori (Seaweed Sheet) *cut into thin strips OR torn into small pieces

Sauce
1 clove Garlic *grated
2 tablespoons Soy Sauce
1 tablespoon Sugar
1 tablespoon Rice Vinegar
1/2 tablespoon Toban Djan (Chilli Bean Sauce)
1/2 tablespoon Sesame Oil
1/2 tablespoon Toasted Sesame Seeds

Method
  1. Combine all the sauce ingredients in a large bowl. Add Salmon slices and vegetables, and mix to combine.
  2. Half fill a bowl with freshly cooked rice and cover it with the Salmon & Vegetable mixture. Place plenty of Nori on top and enjoy.
