I often cook fried rice with Spinach and Egg. It is not easy to cook 4 servings at a time. Then I tried to mix all up in a large mixing bowl. It’s a ‘Mazegohan’. It worked perfectly. Quick, easy, delicious & nutritious, that’s all I want.

Ingredients

2 cups (*180ml cup) Japanese Short Grain Rice
2 to 3 Eggs
Salt & White Pepper
Oil for cooking
120g Baby Spinach
1 tablespoon Sesame Oil
1 tablespoon Toasted Sesame
1 tablespoon Soy Sauce
1 tablespoon Oyster Sauce
White Pepper

Method
  1. Wash Rice and cook as normal. *Note: You can cook the rice in Stock, such as Chicken Stock, instead of Water.
  2. Whisk Eggs in a small bowl and season with Salt and Pepper. Heat a small amount of Oil in a frying pan over medium low heat, cook Egg into small pieces.
  3. Place Baby Spinach in a large mixing bowl. Add Sesame Oil, Toasted Sesame, Soy Sauce, Oyster Sauce and some White Pepper, then mix well to combine.
  4. Add cooked hot rice into the bowl, and mix to combine. Then add Egg and combine.
