You may wish to add other Vegetables, Mushrooms, Ginger, etc. You can add whatever you like. The best additional ingredient that I can recommend is Soft Tofu.

Ingredients

2 cups Chicken Stock OR Dashi Stock
1 tablespoon Sake (Rice Wine) *optional
2 to 3 teaspoons Soy Sauce
Salt as required
2 servings Cooked Rice *Cooked Rice that turned cold and hard is suitable
1 to 2 handfuls Baby Spinach
2 Eggs *lightly whisked
Finely chopped Spring Onion
Sesame Oil *optional

Method
  1. Heat Chicken Stock (OR Dashi Stock) and Sake (Rice Wine) in a saucepan over medium heat. Season lightly with Soy Sauce and Salt.
  2. Add Cooked Rice and cook until Rice is soft.
  3. When Rice is soft, add Baby Spinach and stir. Baby Spinach can be cooked very quickly. Add lightly whisked Egg and gently stir. When the Egg is softly cooked, the soup is ready.
  4. Sprinkle with some finely chopped Spring Onion. Today I drizzled with a small amount of Sesame Oil as well.
