
There is a very popular Japanese sweet called ‘Ichigo Daifuku’ (Strawberry Daifuku Mochi). I crave it sometimes, however, it is not easy to find in stores where I live. I have to make it if I want to eat it. This is a quick and easy alternative to it. Mochi part is cooked like pancakes. You only need a non-stick frying pan.

Ingredients
1/2 cup (about 70g) Glutinous Rice Flour
1/4 cup (about 40g) Plain Flour
1 tablespoon Caster Sugar
150ml Water
Oil for cooking
Sweet Azuki Paste *Koshi-an OR Tsubu-an *about 20g each

Method
- Use a whisk to combine Glutinous Rice Flour, Plain Flour and Sugar in a mixing bowl, add Water and mix well. If it turned too runny, add extra Plain Flour.
- Heat a non-stick frying pan. When it is hot, reduce heat to low. Thinly oil it.
- Pour in 2 tablespoons batter and make a oblong pancake. (e.g. 5cm x 13cm) Try not to brown it. As soon as the bottom is cooked and hard enough, flip it over. When it is cooked, place on a plate and let it cool. Continue cooking with the remaining batter. *Note: The pancakes are very sticky. Do not stack them.
- Place some Sweet Azuki Paste and Strawberry (cut in half if large) on each pancake, and wrap nicely.
