You should stock Canned Fish (e.g. Tuna, Mackerel, Salmon, Sardine) in your pantry. They are a good source of protein and often available on good special prices. I am a big fan of Canned Mackerel. I often make my lunch using a 125g can. I have shared the recipes of ‘Miso Mackerel Don’ and ‘Curry Mackerel Don’. Here is another one to share with you.

1 Serving
Ingredients
1 can (125g) Mackerel in Brine
1 thick Spring Onion *sliced diagonally
1 serving Cooked Rice *warmed
1/4 sheet Toasted Nori *cut into thin strips
Toasted Sesame Seeds
Teriyaki Sauce
1 teaspoon grated Ginger
1 tablespoon Soy Sauce
1 tablespoon Mirin
1 tablespoon Sake (Rice Wine) OR Water
1 teaspoon Sugar
Method
- Drain the Canned Mackerel, discard the brine or water, and break into smaller pieces.
- Heat all the sauce ingredients in a small frying pan or saucepan over a medium low heat, add Spring Onion and Mackerel. Cook for a minute or until Spring Onion is cooked. It won’t take long at all.
- Half fill a bowl with warmed cooked rice and cover it with the Mackerel mixture. Sprinkle some Nori and Toasted Sesame Seeds, and enjoy.

Just had this for lunch. Another super fast and lovely recipe! I added a few beansprouts to the macherel which added some nice texture.
