Japan has the world-famous Cabbage Pancakes ‘Okonomiyaki’. Other countries have their own Cabbage Pancakes. This is my ‘Ukrainian inspired Cabbage Pancakes’. It seems Ukrainian people stew the shredded Cabbage before mixing it with other ingredients. I used my favourite method to wilt the shredded Cabbage. I added Sour Cream as I strongly believe Ukrainians love it.


Makes

6 x 10cm Pancakes

Ingredients

1/4 Cabbage *about 300g
1/2 teaspoon Salt
Ground Pepper to taste
1-2 Spring Onion *finely chopped
1/2 cupful shredded Tasty Cheese (Cheddar) *you can add more if you like
4 tablespoons Self-Raising Flour OR Plain Flour
2 tablespoons Sour Cream
1 Egg
Milk *optional
Oil for cooking

Method
  1. Thinly slice Cabbage, place in a bowl, pour over boiling water, then drain in a colander. Cool under cold water and press down OR squeeze to remove excess water.
  2. Place drained Cabbage in a mixing bowl, add Salt and Pepper, and mix to combine. Add Spring Onion, Cheese, Flour, Sour Cream and Egg, then mix. If too thick to combine, add a small amount of Milk to just combine together.
  3. Heat a small amount of Oil in a frying pan, non-stick preferred, over medium low heat, form pancakes and cook for 5 minutes OR until cooked though and both sides are nicely browned.
