I confess that I love Coles’ Kale Coleslaw Salad Kit and have bought it many times. A bag of veggies comes with dressing and some seeds, and it is $5.00!!! Why don’t I try to make it by myself? So I imitated the Coles’ Kale Coleslaw. The cost of making it could be around $2 or less… It’s a big saving and also I know exactly what’s in the dressing.


2 to 4 Servings


Kale 2 large stems *thick stems removed, thinly sliced
Carrot 1 *thinly sliced into strips
Red Cabbage 2 to 3 leaves *thinly sliced
Beetroot 1 small *thinly sliced into strips, rinsed
Seeds 2 tablespoons *e.g. Pepita (Pumpkin Seeds), Sunflower Seeds, Sesame Seeds

Dressing Ingredients

Plain Greek Yogurt 3 tablespoons
Garlic 1/2 to 1 clove *grated
Dijon Mustard 1/2 tablespoon
White Wine Vinegar OR Lemon Juice 1 tablespoon
Sugar 1 teaspoon *OR Honey, Maple Syrup, other sweetening
Herbs of your choice *I used dry Italian herb mix
Salt & Black Pepper to taste

  1. Place all the Dressing Ingredients in a small bowl, mix well and season with Salt and Pepper.

  2. In a large bowl, combine all vegetables. Drizzle in the dressing and mix thoroughly. Add extra Salt & Pepper if required. Cover with plastic wrap and refrigerate for 20 to 30 minutes.

  3. Add the Seeds and combine well and serve.
