I confess that I love Coles’ ‘Kale Coleslaw Salad Kit’ and have bought it many times. A bag of veggies comes with dressing and some seeds, and it is $5! Why don’t I try to make it by myself? So I imitated the Coles’ Kale Coleslaw. The cost of making it could be around $2 or less… It’s a big saving and also I know exactly what’s in the dressing.
Makes
2 to 4 Servings
Ingredients
Kale 2 large stems *thick stems removed, thinly sliced
Carrot 1 *thinly sliced into strips
Red Cabbage 2 to 3 leaves *thinly sliced
Beetroot 1 small *thinly sliced into strips, rinsed
Seeds 2 tablespoons *e.g. Pepita (Pumpkin Seeds), Sunflower Seeds, Sesame Seeds
Dressing Ingredients
Plain Greek Yogurt 3 tablespoons
Japanese Mayonnaise 1 tablespoon
Grated Garlic 1/4 teaspoon *OR 1/2 teaspoon Garlic Powder
White Wine Vinegar 1 tablespoon
Sugar 1 teaspoon *OR Honey, Maple Syrup, other sweetening
Herbs of your choice 1/2 teaspoon *I used dry Italian Herb Mix
Salt & Black Pepper to taste
*Note: My Buttermilk Dressing is also good for this salad.
Method
- Place all the Dressing Ingredients in a small bowl, mix well and season with Salt and Pepper.
- In a large bowl, combine all vegetables. Drizzle in the dressing and mix thoroughly. Add extra Salt & Pepper if required. Cover with plastic wrap and refrigerate for 20 to 30 minutes.
- Add the Seeds and combine well and serve.

I must congratulate you – the dressing is fantastic!
In my opinion it is superior to any of the store bought varieties.
I also added a sprinkling of Chia seeds – my family love this salad and its so healthy.

Oh yum thank you! I’m currently munching on leftover kaleslaw from last night and googling to find a recipe for the dressing! The Coles brand is by far the best, followed by Aldi, then Woolies (from memory I don’t think they provide the seeds in the pack! Rude!)
