Believe it or not, ‘Carrot & Potato Chips Salad’ is one of the most accessed recipes of mine. I think Potato Chips (Crisps) is an underestimated ingredient. Many people add Croutons to salads. Why not Potato Chips? Please choose good quality REAL Potato Chips. Do not use heavily processed potato-based chips.

Ingredients

120g Iceberg Lettuce *torn into small pieces
2 handfuls Baby Spinach
2 tablespoons Your Favourite Salad Dressing *Today I used Balsamic Dressing
Salt & Black Pepper
2 handfuls Good Quality Potato Chips (Crisps) *coarsely broken
*Note: Today I used plain Salt flavoured crisps. Choose a flavour that goes well with the dressing you use.

Method
  1. Combine Lettuce, Baby Spinach and the dressing in a large bowl. Add Potato Chips (Crisps) and mix to combine.
  2. Season with Salt and Black Pepper if required, but you need to be careful as Potato Chips are often quite salty.
