This is a recipe for not-so-great tomatoes. Of course it would be delicious using sweet ripe tomatoes. But we sometimes buy fairly good looking tomatoes on special and later find out they are not really great, don’t we? Then try this recipe!

Ingredients

Tomatoes 4
Tofu 1 *medium to firm type
Garlic 1 to 2 cloves *crushed & chopped finely
Olive Oil 1 tablespoon
Soy Sauce 2 tablespoons

Method
  1. Cut Tomatoes into wedges and Tofu into 2 to 3cm pieces.
  2. Heat Olive Oil in a fry pan, cook Garlic and Tomatoes.
  3. When Tomatoes started softening and juice is coming out, add Tofu and Soy Sauce. Cook until the sauce is slightly thickened and all is well combined. Serve with rice.
