I often use Dry Mixed Herbs and Black Pepper to season ‘My Family’s Lamb Koftas’, but, of course, other Spices and Herbs can be used. Today I seasoned it in the middle eastern flavour (I believe it is) and tried to make it into Kebabs. I even purchased long and thick bamboo BBQ skewers for this dish. However, the skewers didn’t fit in my grill pan!!! I used bamboo chopsticks instead and they worked perfectly. By the way, these Kebabs were delicious.


Makes

3 to 4 Servings *8 Skewers

Ingredients

500g Lean Lamb Mince
1/2 Onion *very finely chopped
1 clove Garlic *grated
1/2 cup Breadcrumbs *I used ‘Panko’ Breadcrumbs
1 Egg
2 tablespoons finely chopped Parsley, Mint OR Coriander *save some for topping
1 teaspoon Ground Cumin
1 teaspoon Ground Coriander Seeds
1 teaspoon Ground Paprika
1/4 teaspoon Ground Chilli
1/4 teaspoon Ground Pepper
1/2 teaspoon Salt
*Note: You can use any Spices of your choice
Oil for cooking

Method
  1. Place all ingredients into a large mixing bowl, mix to combine, and divide into 8 portions. Form each portion into a sausage, insert a thick skewer OR chopstick, firmly pack the mixture around it, and shape into a flat sausage.
  2. Heat a grill pan OR frying pan over medium heat, apply a small amount of Oil only if required, and cook until browned on both sides and cooked through.
  3. Yoghurt Sauce goes well with these Kebabs. To make Yoghurt Sauce, mix following ingredients.
    • 1/2 cup Greek Yoghurt
    • 1 clove Garlic *grated
    • 1-2 teaspoons Olive Oil
    • 1-2 teaspoons Lemon Juice
    • Salt & Pepper to taste
