I often use Dry Mixed Herbs and Black Pepper to season ‘My Family’s Lamb Koftas’, but, of course, other Spices and Herbs can be used. Today I seasoned it in the middle eastern flavour (I believe it is) and tried to make it into Kebabs. I even purchased long and thick bamboo BBQ skewers for this dish. However, the skewers didn’t fit in my grill pan!!! I used bamboo chopsticks instead and they worked perfectly. By the way, these Kebabs were delicious.
3 to 4 Servings *8 Skewers
500g Lean Lamb Mince
1/2 Onion *very finely chopped
1 clove Garlic *grated
1/2 cup Breadcrumbs *I used ‘Panko’ Breadcrumbs
2 tablespoons finely chopped Parsley, Mint OR Coriander *save some for topping
1 teaspoon Ground Cumin
1 teaspoon Ground Coriander Seeds
1 teaspoon Ground Paprika
1/4 teaspoon Ground Chilli
1/4 teaspoon Ground Pepper
1/2 teaspoon Salt
*Note: You can use any Spices of your choice
Oil for cooking
- Place all ingredients into a large mixing bowl, mix to combine, and divide into 8 portions. Form each portion into a sausage, insert a thick skewer OR chopstick, firmly pack the mixture around it, and shape into a flat sausage.
- Heat a grill pan OR frying pan over medium heat, apply a small amount of Oil only if required, and cook until browned on both sides and cooked through.
- Yoghurt Sauce goes well with these Kebabs. To make Yoghurt Sauce, mix following ingredients.
• 1/2 cup Greek Yoghurt
• 1 clove Garlic *grated
• 1-2 teaspoons Olive Oil
• 1-2 teaspoons Lemon Juice
• Salt & Pepper to taste
