‘Tonkatsu’ (Pork Cutlets) and ‘Chicken-katsu’ (Chicken Cutlets) are often served with ‘Tonkatsu’ Sauce. ‘Tonkatsu’ Sauces are available from many Asian grocery stores and some supermarkets, but if you can’t find it, why don’t you make it by yourself.

‘Tonkatsu’ Sauce is quite sweet. I think it is a mix of some Fruit Chutney, Tomato Ketchup, Worcestershire Sauce, Sugar and Spices. It tastes like HP BBQ sauce. Here are two recipes for you to try.


Mock ‘Tonkatsu’ Sauce

Ingredients

2 tablespoons Tomato Ketchup
2 teaspoons Worcestershire (Lea & Perrins)
1-2 teaspoons Sugar
2 teaspoons Soy Sauce

Method

Combine all ingredients. You can add a small amount of Lemon Juice, Chutney, Mustard or grated Ginger for extra flavour.


Sesame ‘Tonkatsu’ Sauce

Ingredients

1 tablespoon Toasted Sesame Seeds *ground until moist
2 tablespoons Tomato Ketchup
1 tablespoon Worcestershire (Lea & Perrins)
1-2 teaspoons Soy Sauce
1-2 teaspoon Sugar

Method

Grind Toasted Sesame Seeds until moist. Then combine all ingredients and mix well.


Sweet Miso Sauce

Ingredients

2 tablespoons Miso
1 tablespoon Sugar
2 tablespoons Mirin
1-2 teaspoons Soy Sauce
*Note: Alter the amount of Sugar and Mirin depending on the type of Miso you use. Darker colour Miso has stronger flavour.

Method

Combine all the ingredients in a heat-proof bowl, and heat in the microwave for 1 minute and stir well.
