Because I have been cooking Ukrainian dishes lately, I always have Sour Cream and Dill in my fridge. I just mixed leftover Azuki Beans and steamed Sweet Potato with Sour Cream. I also added Dill. This dish is something I would never have thought of making if I hadn’t cooked Ukrainian dishes. New something often leads us to another new something.

Ingredients

1/4 cup Dry Azuki Beans
1 Sweet Potato *about 400g
Salt & Pepper
2 tablespoons Sour Cream
2 tablespoons Mayonnaise *I used Japanese Mayonnaise
*Note: You can use 4 tablespoons Sour Cream only
Dill *optional

Method
  1. Cook Azuki beans in salted water in a saucepan until soft, then drain. *Note: You don’t need to soak Dry Azuki Beans over night.
  2. Peel Sweet Potato, cut into small pieces, then boil in salted water OR steam until soft. Today I steamed.
  3. Place cooked Azuki beans and Sweet Potato pieces in a mixing bowl, and season with Salt & Pepper. Add Sour Cream and Mayonnaise, and mix to combine. *Note: You can add some chopped fresh Dill if you like it.
