
Vegetable prices are rising lately. The other day I saw a bag of wonky Red Capsicums at a local green grocer, and it was cheap. Of course, I bought one. Wonky Vegetables taste the same, you know. I was a little tired today and I couldn’t bother doing any extra work to cook the wonky Red Capsicums. So, I simply baked them. Read the recipe below. Nothing can be easier than this, and it was delicious.

Ingredients
2 to 4 Red Capsicums *cut into chunky bite-size pieces
Olive Oil
Salt & Black Pepper
Shredded Tasty Cheese OR Cheese Mix for baking *I used about 60g
Parsley, Basil OR other Herb of your choice
Method
- Preheat oven to 220℃.
- Remove seeds of Red Capsicums, and cut into chunky bite-size pieces. Place in a baking dish. *Note: I used a large pie dish.
- Drizzle some Olive Oil over and mix to coat each piece with Oil. Arrange them in the dish in a single layer. Sprinkle with some Salt & Pepper.
- Bake for 15 minutes, take it out, scatter some shredded Cheese, and place it back in the oven. Bake for 10 more minutes OR until Cheese is nicely golden.
- Sprinkle with some Herb and extra Black Pepper if you like it. Today I added Parsley. Fresh Basil would be lovely.
