Bananas turn spotty and black very quickly in hot summer. When I have very ripe Bananas, I usually bake Banana Cake but I don’t want to bake a cake on a hot day. Today I made this Yoghurt Ice Cream. I mashed the ripe Bananas and mixed with Yoghurt and whipped Cream. Even children can make this Ice Cream, and it is delicious.

Ingredients
1 to 2 Ripe Bananas
1/4 cup (4 tablespoons) Caster Sugar *alter the amount to suit your taste
1/2 cup Unsweetened Greek Yoghurt
1/2 cup Thickened Cream
Method
- Mash Ripe Bananas into smooth paste. *Note: I used a fork, but you need to use a stick blender if you want to make it absolutely smooth.
- Add Caster Sugar and Greek Yoghurt, and mix well.
- Beat Cream until soft peaks form. Fold into the Banana mixture and combine well.
- Pour the mixture into a container. Freeze for a few hours until firm. *Note: To soften completely frozen Ice Cream, transfer from the freezer to the fridge 20 minutes before serving, OR leave it at room temperature for 10 minutes.
