The other day I first made ‘Salty Rhubarb Paste’, that can be a substitute for ‘Umeboshi’. It was too sour for me, so I decided to added Sugar. When I tasted it, the flavour instantly brought back a memory of my childhood and I remembered a yummy paste that I used to eat with freshly cooked Rice. I tried to recreate the paste. IT WAS SERIOUSLY YUMMY!!! And I couldn’t believe I made it with Rhubarb.


Makes

1 to 2 Servings

Ingredients

1 tablespoon Salty Rhubarb Paste
1 sachet (2.5g) Katsuobushi (Bonito Flakes) *OR 2 sachets (5g)
1 teaspoon Sugar
1 teaspoon Soy Sauce
1 teaspoon Toasted Sesame Seeds

Method
  1. Combine all ingredients. How simple is that?
  2. *Note: If you add 2 sachets (5g) Katsuobushi (Bonito Flakes), you might think it is too much. Today I used 2 sachets. Once combine, dry fish flakes absorb the moisture and the volume will reduce.
