All Broad Bean lovers should try this delicious dip. Fresh Broad Beans are lovely, but Frozen Broad Beans can be used. Nice crusty bread or grilled flat bread would be perfect with this dip.
About 1 Cupful
1 heaped cupful Broad Beans flesh *tough skin removed
1/2 clove Garlic *finely chopped
1/2 to 1 tablespoon Lemon Juice
1/2 to 1 tablespoon Olive Oil
Salt & Pepper
1 tablespoon grated Parmesan *optional
- Place Broad Beans flesh and Garlic in a saucepan, add Water just enough to cover. Cook 5 to 10 minutes or until Broad Beans are soft.
- Drain but save the liquid.
- Add Lemon Juice and Olive Oil. Using a stick blender, and adding some saved liquid as required, blend until smooth and the required texture is achieved.
- Season with Salt & Pepper. Add grated Parmesan but it is optional. Drizzle with extra Olive Oil and enjoy with nice crusty bread or grilled flat bread.
