‘Buta’ means ‘Pig’ OR ‘Pork’ in Japanese. This is a Udon Noodle version of the popular ‘Buta Don’ (Pork Rice Bowl). It is extremely simple to make, yet it is delicious, and better than take away stir-fried noodles. The Egg Yolk is optional but highly recommended. The Egg Yolk would be slightly cooked by the heat of hot Udon Noodles and Pork, and creates a yummy sauce.

Ingredients
120g Thinly Sliced Pork Belly *cut into bite-size pieces
1 teaspoon Oil *I used Sesame Oil
Chilli Flakes as required
1 serving Cooked Udon Noodles
1 Egg Yolk *optional, OR softly cooked Whole Egg
Finely Chopped Spring Onion
Toasted Sesame Seeds
Sauce
1/2 teaspoon Sugar
1 tablespoon Soy Sauce
1 tablespoon Mirin
1 clove Garlic *grated OR finely chopped
1 small piece Ginger *grated
Method
- Heat Cooked Udon Noodles in boiling water, then drain.
- Combine all the Sauce ingredients in a small bowl.
- Heat Oil in a small frying pan over medium heat, cook Pork and Chilli. When cooked, add the Sauce, and cook until the sauce thickens.
- Place the drained Udon Noodles in a serving bowl, cover with Pork, add Egg Yolk, Spring Onion and Toasted Sesame Seeds, and enjoy.
