‘Tamago Toji’ is a Japanese cooking method to bind the ingredients cooked in sauce or soup with ‘Tamago’, egg(s). Obviously, ‘Toji’ comes from a verb ‘tojiru’ that means ‘bind’. The method is popularly used. ‘Oyako’ Don is an example. This recipe uses Cabbage and Peas, but you can use whatever vegetables you have in hand.

Ingredients

1 cup Chicken Stock OR Stock of your choice
1/4 Cabbage *cut into chunky pieces
2 cups Frozen Peas
Salt & Black Pepper
4 to 6 Eggs
Parmesan Cheese *optional

Method
  1. Heat Chicken Stock OR Stock of your choice in a deep frying pan or pot, add Cabbage, cover with a lid, and simmer for 5 minutes. Add Peas, cover with a lid, and simmer until vegetables are soft and cooked. *Note: If you want to make the dish more like soup, you can add extra stock.
  2. Season with Salt & Black Pepper.
  3. Beat Eggs and pour over the vegetables, but DO NOT stir. Cover with a lid and simmer until the Egg is softly set. Enjoy with some Parmesan Cheese and extra Pepper.
