
Here is another super easy dish that you can make with a small can of Mackerel. This is a perfect dish on a hot summer day. You don’t want to cook? Well… it won’t take long to cook Somen Noodles (OR Angel Hair Pasta). Other than that, you don’t need to cook anything. It’s quick & easy, nutritious and delicious.

Ingredients
1/2 tablespoon Dried Cut Wakame
5cm Cucumber *thinly sliced
1 can (110g) Mackerel in Brine OR Oil
2 tablespoons Ponzu *OR 1 tablespoon Soy Sauce & 1 tablespoon Rice Vinegar
1 teaspoon Sugar
1 teaspoon Sesame Oil *optional
1 serving Somen Noodles OR Angel Hair Pasta (Capellini) *about 90g
Finely chopped Spring Onion
Toasted Sesame Seeds
Crispy Chilli Oil OR Shichimi (Japanese Chilli Spice Mix) *optional
Method
- Soak Dried Cut Wakame in water until soft. Darin, squeeze to remove excess water, and place in a bowl. Add thinly sliced Cucumber and drained Mackerel.
- Cook Somen Noodles (OR Angel Hair Pasta) according to the instruction, drain, rinse under cold water, then drain well. Place in a serving bowl.
- Add Ponzu, Sugar and Sesame Oil to Wakame, Cucumber and Mackerel, mix to combine, then place on the Somen Noodles.
- Add Spring Onion, Toasted Sesame Seeds and Crispy Chilli Oil (OR Shichimi) if you like, and enjoy.
