The famous Italian dish ‘Spaghetti Carbonara’ is simple to cook and delicious. If you gave up eating it because of wheat allergy or gluten sensitivity, you may wish to try this ‘Carbonara Rice’.


1 Serving


40g Pancetta OR Bacon *cut into small pieces
1 teaspoon Olive Oil
1 to 2 Eggs
20g Pecorino OR Parmesan Cheese *grated
Black Pepper
1 serving warm Cooked Rice *Short OR Medium Grain recommended
Salt to taste
Finely chopped Parsley

  1. Lightly beat the Eggs in a bowl with the grated Cheese, add some freshly ground Black Pepper.
  2. Heat Olive Oil in a frying pan and cook Pancetta OR Bacon until crisp. Add warm Cooked Rice, stir-fry and lightly season with Salt. Add the Egg mixture and stir until softly cooked.
  3. Sprinkle with finely chopped Parsley and extra Pepper, and enjoy.
