Chicken_Doria

‘Doria’ is a very popular rice dish in Japan. Butter rice or pilaf is covered with White Sauce (Béchamel Sauce) and grated cheese, then baked in the oven. This ‘Chicken Doria’ is the most basic ‘Doria’ dish which is seasoned with salt & pepper. You can add herbs and spices to create your own flavour. My children love this basic flavour ‘Doria’ the best.

Ingredients

4 servings Cooked Rice
1 tablespoon Oil
500g Chicken Thigh Fillets *cut into bite size pieces
1 Onion *finely chopped
6 to 8 Mushrooms *sliced
Salt & Pepper
1-2 teaspoons Oil *for greasing the baking dish
Tasty Cheese 1 cup *grated, you can add grated Parmesan

White Sauce

40g Butter
1/4 cup Plain Flour
2 cups Milk
Salt & Pepper

Method
  1. Preheat oven to 200C.
  2. Heat Oil in a large frying pan, cook Chicken, Onion and Mushrooms until Chicken are cooked. Season with Salt & Pepper quite well, then add Cooked Rice and combine. More Salt and Pepper if required.
  3. To make White Sauce, heat Butter in a saucepan over medium heat until melted and foaming, add Flour and cook stirring until mixture bubbles. Slowly add Milk, stirring constantly until sauce boils and thickens. Season with Salt & Pepper.
  4. Lightly oil a large ovenproof dish, place the Rice mixture and pour the White Sauce over the Rice. Cover with grated Cheese, and bake for 20 minutes or until golden.
