This type of salad dish is called ‘Aemono’ in Japan. A variety of Vegetables can be used. ‘Aemono’ is often simply seasoned and offered as a side dish. This Cucumber & Nori ‘Aemono’ Salad is also very simple. Salt is the main seasoning. To enjoy the flavour of Cucumber and Toasted Nori, you don’t need to season strongly.

Ingredients
1 Cucumber *cut into bite-side pieces
1/4 teaspoon Salt *add more if required
1 teaspoon Sesame Oil
1 teaspoon Soy Sauce
1 teaspoon Toasted Sesame Seeds
1 sheet Nori (Seaweed) *toasted and torn into small pieces
Method
- Cut Cucumber into bite-side pieces and place in a mixing bowl. Add Salt, mix to combine, and set aside.
- Add Sesame Oil, Soy Sauce and Toasted Sesame Seeds, and mix well. Toast Nori over flames until aromatic and crispy, tear into small pieces, add to the Cucumber, and mix to combine. Serve immediately.
- *Note: Some finely chopped Spring Onion OR Shichimi (Japanese Chilli Spice Mix) can be sprinkled on top.
