‘Dorayaki’ is two small pancake-like sponge wrapped a filling. The most popular filling is ‘Tsubu-an’ (Sweet Azuki Paste), but you can use any filling as there is no rule. Today I made with Sweet Potato Paste. You can reduce the amount of Sugar when you make the paste, so that you can enjoy the natural sweetness of Sweet Potato.
6 to 8 Dorayaki
1 cup Self-Raising Flour
1/2 cup Sugar
1/2 cup Water
Sweet Potato Paste
- Make thin 10cm pancakes with least possible Oil. Non stick pan is recommended as you need no Oil.
- This pancake recipe is specially for ‘Dorayaki’. Because of the larger amount of sugar, it would be easy to burn quickly. Please cook on low heat and try to make one side brown. The other side doesn’t require to be browned.
- Sandwich 1 to 2 tablespoons of Sweet Potato Paste with two pancakes.
