When I make fennel salad, I always make the same salad. It’s ‘Fennel & Orange Salad’. Boring, isn’t it? I should have created a new fennel salad. I tried to make an Asian flavoured fennel salad, but ‘Ponzu’ and soy sauce based dressings were not really good with fennel. Then, I discovered that the sweet chilli sauce and fish sauce were surprisingly good! If you have never tried the Asian flavoured fennel salad, you got to try this!

Ingredients
Fennel 1/2 *about 180g
Coriander 20 to 30g
Cooked Prawns 100g
Garlic 1 clove *finely chopped
Fish Sauce 1 tablespoon
Sweet Chilli Sauce 1 to 2 tablespoons
*Note: You can make Sweet Chilli Sauce by mixing same amount of Chilli Garlic Sauce and Sugar.
Method
- Thinly slice Fennel. Wash Coriander well and pick the leaves and finely chop the stems.
- Place Garlic, Fish Sauce and Sweet Chilli Sauce in a large bowl, and mix well. Add Fennel, Coriander and cooked Prawns, and combine well. Serve immediately.
- This salad is great with rice noodles.
