Pork ‘Shogayaki’ (Ginger Pork) is a very popular Japanese dish. I have made it into a spaghetti dish, but other noodles such as Udon noodles would be also good. This simple pork mixture is very versatile and you can make it into a rice bowl dish, too.

Ingredients

2 servings Spaghetti
200 to 250g Pork *thinly sliced
Salt
1 Onion *thinly sliced
1 tablespoon Canola Oil
1 handful Baby Spinach
Shichimi (Japanese Chilli Spice Mix) *optional

Sauce Ingredients

1 small piece Ginger *grated
2 tablespoons Soy Sauce
2 tablespoons Mirin

Method
  1. Start cooking Spaghetti in boiling salted water according to the instruction.
  2. Combine all the sauce ingredients in a small bowl. Slice Pork thinly (thinner is better) and lightly season with Salt. Prepare all vegetables.
  3. Heat Oil in a frying pan over medium high heat, cook thinly sliced Pork and Onion. When Pork and Onion are cooked, add the sauce and Baby Spinach. Add cooked Spaghetti, with some liquid as well, and combine well.
  4. Sprinkle with Shichimi (Japanese Chilli Spice Mix) if you like it and enjoy.
