Helen is a good friend of our family. She and her husband often invite us for BBQ and one day we realised that Helen always makes this ‘Tomato Salad’. I copied her salad but I make it without Olive Oil. If you like Olive Oil, you can add it for extra flavour and nutrients, and of course extra calories. I like it without Oil.
4 to 6 Servings
Ripe Tomatoes 4 *cut into small pieces
Red Onion 1/2 *finely chopped
Fresh Herbs (Basil, Oregano and Parsley) 2 to 3 tablespoons *finely chopped
Salt 1/4 teaspoon
Freshly Cracked Pepper as required
Balsamic Vinegar 2 to 3 teaspoons
- Fresh Herbs are definitely better, but I sometimes use 1 to 2 teaspoons of dry Italian Herb Mix instead.
- Combine everything in a large bowl and serve immediately.
