A few days ago, I was given a lot of home-grown organic Lemons, and I have been making Lemon desserts. Today I made a simple jelly. When I make jelly using fresh Lemon Juice, I always use Golden Cup Agar Agar Powder to set the jelly. Most Asian grocery stores sell it. This vegetarian dessert is very refreshing. I like it quite sour, but it’s up to your preference. It’s very easy to make, and you only need Agar Agar Powder, Water, Lemon Juice and Sugar.

Ingredients
4g (1 & 1/4 teaspoons) Agar Agar Powder *I used Golden Cup Agar Agar Powder
*Note: You can reduce the amount to 1 teaspoon (about 3g) for softer jelly.
2 cups (500ml) Water
4 to 6 tablespoons Sugar *1 tablespoon is 15ml
3 to 4 tablespoons Lemon Juice *read ‘Method 2’
Method
- Place Water and Agar Agar Powder in a saucepan, and mix well. Bring to the boil over medium heat, stirring frequently. Once boiling, lower the heat and simmer for 1 minute.
- Remove from heat, add 4 tablespoons Sugar and 3 tablespoons Lemon Juice, and mix well. Taste it, and add extra Sugar and Lemon Juice to suit your taste.
- *Note: Depending on the sourness of the Lemon Juice you use, you need to alter the amount of Sugar and Lemon Juice. Today I added 5 tablespoons Sugar and 4 tablespoons Lemon Juice. Please be aware the taste will become stronger when the jelly is set.
- Allow it to cool slightly, but do not leave it for too long because this Jelly sets at room temperature. Pour the jelly mixture into the serving glasses OR jelly moulds. Leave in the fridge until set.
- *Note: You may wish to decorate the jelly with fresh Fruit OR whipped Cream. I recommend to serve the jelly with Unsweetened Greek Yoghurt.
