If you are looking for an alternative for ‘Mashed Potatoes’, try this ‘Mashed Cauliflower’. It looks exactly like ‘Mashed Potatoes’. The texture is, of course, different and lighter than ‘Mashed Potatoes’. The most importantly, it is a lot lower in calories.
1 head Cauliflower *cut into florets
2 cloves Garlic
1 teaspoon Salt for cooking Cauliflower
20 to 30g Butter
Salt & Freshly Ground Pepper
1/2 cup grated Parmesan OR Cheese of your choice
- Cook Cauliflower and Garlic in boiling salted water in a large saucepan until tender.
- Drain very well, and return to the saucepan. Add Butter and mash, season with Salt & Pepper as required. Add grated Parmesan OR Cheese of your choice, and use a spoon or spatula to mix until smooth.
