This dish is much easier to cook than you think. I just cooked Beef Mince, Onion, Garlic and Capsicum, and seasoned with the Spices that I normally use for Mexican flavoured dishes such as ‘Chilli Con Carne’ OR ‘Mexican Chicken’. Add extra toppings of your choice and enjoy. If you cook it for more servings, you can multiply this recipe.

Ingredients
125g Beef Mince
1/4 Onion *finely chopped
1 small clove Garlic *finely chopped
1/4 Capsicum *I used Red Capsicum
1 to 2 teaspoons Oil
1 tablespoon Tomato Paste *OR 1 to 2 tablespoons Tomato Sauce, Passata, etc.
1 serving warm Cooked Rice
Additional toppings of your choice *I added Avocado, Grape Tomatoes, Sour Cream and Coriander
*Note: Other topping suggestions include Lettuce, Cucumber, Shredded Cheese, Fried Egg, Taco Salsa, Pickled Jalapeño, etc.
Seasoning
1/2 teaspoon Ground Cumin
1/2 teaspoon Ground Coriander Seeds
1/2 teaspoon Paprika
1/2 teaspoon Dried Oregano
1/4 teaspoon Salt *plus extra if required
Ground Chilli OR Tabasco as required
Method
- Heat Oil in a small frying pan over medium heat, cook Onion, Garlic and Capsicum for a few minutes, add Beef Mince, and cook until Beef changes colour.
- Add all the Seasoning ingredients and Tomato Paste with 1 tablespoon Water, and stir for a few minutes. Taste it, and add extra Salt OR Chilli (OR Tabasco) if required.
- Half fill a bowl with warm Cooked Rice, cover with the Beef mixture, add extra toppings of your choice, and enjoy.
