‘Nametake’ Enoki, a popular Japanese dish, is super simple and easy to make. If you have ‘Nametake’ in your fridge, it takes only a few minutes to prepare this absolutely delicious rice bowl dish. ‘Nametake’ is delicious with Rice, Noodles, Pasta, Tofu, etc. You can use it for cooking as well. Ingredients

4 to 5 tablespoons ‘Nametake’ *see ‘Method 1’
1 serving warm Cooked Rice
1 Egg Yolk *OR 1 softly cooked Whole Egg, e.g. Poached Egg
Finely chopped Spring Onion
Toasted Sesame Seeds
Crispy Chilli Oil

‘Nametake’ Enoki
80g Enoki Mushrooms
2 teaspoons Soy Sauce
2 teaspoons Mirin

Method
  1. To cook 1 serving ‘Nametake’ Enoki just for this dish, cut off the brown bottom of Enoki Mushrooms, clean them, and cut into 3-4cm long pieces.
  2. Place Enoki pieces in a small frying pan OR saucepan, add Soy Sauce and Mirin, and cook over medium heat, stirring constantly, until soft.
  3. Half fill a bowl with warm Cooked Rice, cover it with ‘Nametake’, and place Egg Yolk (OR softly cooked Egg) on top. Sprinkle with some Spring Onion and Toasted Sesame Seeds, add some Crispy Chilli Oil, and enjoy.
