
Macaroni Salad is the most popular salad in Japan and I have my own recipe. It’s a lovely salad and I have been making it repeatedly for decades. The same Macaroni Salad again and again, and I wanted to make something different today. This is my American inspired Pasta Salad, but still tastes Japanese as I use Japanese Mayonnaise.

Ingredients
2 cups Dry Elbows Pasta, Macaroni OR Pasta of your choice *about 200g
1-2 stalks Celery *thinly sliced
1/4 Red Onion *finely chopped
1 Tomato *cut into small pieces
1 tablespoon finely chopped Parsley
1/3 cup Japanese Mayonnaise
3 tablespoons Sour Cream
1 tablespoon White Wine Vinegar OR Vinegar of your choice
1 teaspoon Sugar
1 teaspoon Mustard Powder OR Mustard
1/2 teaspoon Salt *add extra to suit your taste
Freshly Ground Black Pepper
Method
- Cook Dry Elbows Pasta (OR Pasta of your choice) in a large saucepan of salted boiling water as instructed. Drain, rinse with cold water and drain very well.
- Place all ingredients in a large bowl and mix to combine. Season with Salt and Pepper as required.

I’m not a big fan of celery, but this salad was quite good! I added some leftover chicken, it went really well
