I saw a lovely looking dish of roasted Broccoli and Potatoes that were mixed with Garlic and Anchovy. Sounds really good, doesn’t it? But, I didn’t want to use the oven. If it is just Broccoli, I would cook it in a frying pan. But I needed to cook Potatoes as well. So, I boiled them in a saucepan. Then combined everything in a mixing bowl. I added Cheese as well. OMG!!! It was so yummy, super easy to cook, and energy efficient, too.

Ingredients

2 to 3 Potatoes *about 500g
1 head Broccoli *cut into small florets and pieces
Salt for cooking
1 tablespoon Olive Oil
1 clove Garlic *grated
3-4 fillets Anchovy *finely chopped
1/8 Onion *finely chopped
1 tablespoon finely chopped Parsley *OR Italian Herb Mix
Salt & Black Pepper
1/4 cup grated or shredded Tasty Cheese (Cheddar)
1 to 2 tablespoons grated Parmesan

Method
  1. Peel Potatoes, cut into bite-size pieces, and cook in the salted Water. When almost cooked, add Broccoli, and cook them together.
  2. Meanwhile, add all other ingredients except Cheese in a large mixing bowl and mix well.
  3. When Potato and Broccoli are cooked, drain well, and add to the bowl, add Cheese as well, and mix to combine. Add extra Salt & Black Pepper if required.
