
I saw a lovely looking dish of roasted Broccoli and Potatoes that were mixed with Garlic and Anchovy. Sounds really good, doesn’t it? But, I didn’t want to use the oven. If it is just Broccoli, I would cook it in a frying pan. But I needed to cook Potatoes as well. So, I boiled them in a saucepan. Then combined everything in a mixing bowl. I added Cheese as well. OMG!!! It was so yummy, super easy to cook, and energy efficient, too.

Ingredients
2 to 3 Potatoes *about 500g
1 head Broccoli *cut into small florets and pieces
Salt for cooking
1 tablespoon Olive Oil
1 clove Garlic *grated
3-4 fillets Anchovy *finely chopped
1/8 Onion *finely chopped
1 tablespoon finely chopped Parsley *OR Italian Herb Mix
Salt & Black Pepper
1/4 cup grated or shredded Tasty Cheese (Cheddar)
1 to 2 tablespoons grated Parmesan
Method
- Peel Potatoes, cut into bite-size pieces, and cook in the salted Water. When almost cooked, add Broccoli, and cook them together.
- Meanwhile, add all other ingredients except Cheese in a large mixing bowl and mix well.
- When Potato and Broccoli are cooked, drain well, and add to the bowl, add Cheese as well, and mix to combine. Add extra Salt & Black Pepper if required.
