Gochujang (Korean Spicy Miso) that I bough to cook a Korean dish has been sitting in the fridge for nearly a year. I wanted to use it up, so I cooked this ‘Bulgogi’ inspired stir-fried Beef Udon for my lunch today, and it was so delicious. I must write down how I cooked it. If you like spicy food, you may wish to add more Gochujang, but 1/2 tablespoon is pretty hot.

Ingredients

80 to 100g Beef *thinly sliced
4cm Carrot
1/4 Onion
1/4 bunch Garlic Chives *about 30g
1/2 tablespoon Sesame Oil
1 serving Udon *frozen type recommended
Toasted Sesame Seeds

Sauce
1/2 clove Garlic *grated
1/2 tablespoon Gochujang (Korean Spicy Miso)
1 tablespoon Soy Sayce
1 tablespoon Mirin
1/2 teaspoon Sugar

Method
  1. Cut all Vegetables into 4cm thin strips or pieces. Prepare Udon Noodles. If you use Frozen Udon, simply warm in hot water and loosen.
  2. Combine all the sauce ingredients in a small bowl.
  3. Heat Sesame Oil in a frying pan over medium heat, cook Carrot, Onion and Beef slices. When Beef is cooked, add Garlic Chives and stir-fry for a minute. Then add the sauce and stir to combine.
  4. Add drained Udon Noodles, and stir for 1 minute or until well combined. Sprinkle with some Toasted Sesame Seeds and enjoy.
