The other day, my daughter took me to a Korean restaurant and introduced me some Korean dishes. One of her favourites was grilled Corn & Cheese which was served in a cast iron plate. It was very sweet. I recreated it in my way using my pie dish, and in the flavour that I like. Sweet Corn is sweet enough for me and I don’t want to add any Sugar, but you might like it sweeter.


Makes

2 to 3 Servings *I used 22.5cm Pie Dish

Ingredients

10g Butter
1/4 Onion *finely chopped
2 cups (about 300g) Corn Kernels *thawed if frozen, drained if canned
*Note: I used 3 cups Corn Kernels for the above photo. You need to alter the amount of other ingredients accordingly.
3 to 4 tablespoons Japanese Mayonnaise
1/4 teaspoon Salt *alter to suit your taste
Ground Pepper as required
Additional Sugar *optional, I didn’t add any Sugar
2/3 cup shredded Cheese Mix for Pizza OR Mozzarella *OR Cheese of your choice
Finely chopped Parsley *optional

Method
  1. Preheat oven to 200 to 220℃.
  2. Melt Butter in a frying pan over medium heat, cook finely chopped Onion for 1 to 2 minutes, add Corn Kernels, and mix to combine. Remove from heat.
  3. Add Mayonnaise, Salt and Pepper, and mix to combine. Spoon the mixture into a pie dish OR baking dish, spread evenly, cover with shredded Cheese, bake for 15 to 20 minutes OR until nicely browned.
  4. Sprinkle with some finely chopped Parsley and serve. You can sprinkle with some Ground Pepper OR Chilli.
