I often stir-fry Tomatoes with Egg, and it is my family’s favourite dish. Today I added Tuna for this quick and easy rice bowl dish. This is another super easy dish that you can cook with a small can of Tuna. I always use Tuna in Springwater. If you use Tuna in Brine, you need to alter the amount of Soy Sauce because Tuna is salty.

Ingredients

1 Egg
Salt & White Pepper
1 teaspoon Oil *plus extra
1 small clove Garlic *finely chopped
Chilli Flakes
1 Tomato *cut into chunky bite-size pieces
1 can (95g) Tuna *I used Tuna in Springwater
1 tablespoon Soy Sauce *reduce the amount if Tuna is salted
1 tablespoon Mirin
1 serving warm Cooked Rice
Finely Chopped Spring Onion

Method
  1. Whisk Egg and lightly season with Salt & White Pepper. Heat Oil in a small frying pan over medium heat, cook Egg softly, and transfer to a plate or the bowl you used to whisk the Egg.
  2. Add extra Oil to the pan if required, add Garlic, some Chilli Flakes and Tomato, and cook for a few minutes. Then add Soy Sauce and Mirin.
  3. There should be plenty liquid in the pan now. Add drained Tuna, stir, then add Egg and combine.
  4. Half fill a bowl with warm Cooked Rice and cover it with the mixture, sprinkle with some fine chopped Spring Onion, and enjoy.
