This salad is known as ‘Dniester’ Salad in Ukraine. Is that true? Smoked Sausage is used for this salad, but it is impossible for me to find Ukrainian Smoked Sausage. I heard that Polish ‘Kielbasa’ is similar to Ukrainian Smoked Sausage. If you can find ‘Kielbasa’, you may wish to try it. For most Australians, Kabana is the easiest alternative. European Smoked Sausages that can be eaten without cooking them would be suitable, but I think Spicy Sausages are not very good. Some people add Boiled Eggs to this salad, and I think it is a great idea.

Ingredients

1/4 Cabbage Cabbage *about 400g
1/3 to 1/2 teaspoon Salt
100g Smoked Sausage *Polish ‘Kielbasa’ seems a good alternative. Today I used ‘Kabana’
1 cup Peas *Frozen Peas OR Canned Peas are fine
2-3 tablespoons Sour Cream
2-3 tablespoons Mayonnaise *I used Japanese Mayonnaise
Ground Pepper

Method
  1. Thinly slice Cabbage, place in a mixing bowl, add Salt, mix to combine, and set aside for 15 to 30 minutes. Squeeze (OR press) to remove excess salty water.
  2. Blanch Peas in salted water in a saucepan and drain. If you use Canned Peas, drain well. Slice Smoked Sausage and cut into strips.
  3. Place squeezed Cabbage, drained Peas and sliced Sausage in a mixing bowl, add Sour Cream, Mayonnaise and Ground Pepper, and mix to combine.
  4. *Note: You may wish to add some Herbs such as Parsley OR Dill.
